Anchovies in Green and Red Sauce
In an ideal world I would be a chef, a gourmet, a food writer,all of these or even just one of them, but for now I will be simply me, an Italian foodie, who live in Piedmont and who love to: eat, shot pictures of food, try new restaurants and share what my thoughts.
This blog is nothing more than a way to share recipes I know, ideas, thoughts about food, pictures and everything else come through my mind and I really hope you will enjoy it.
Now for the very first lucky readers who are passing by today here the recipe of today: anchovies in green and in red sauce.![]() | |||

I wake up this morning, in typically autumn day, you know the feeling I'm sure, when you get out from the bed and take a look out of the window and all you see is, fog,clouds and a chance of a depressive day, but we are here to make the day with something good aren't we? Soooo I put some music on (just see the list at the end of the post) and start to think... green,red, colors,sea..and here it comes the idea:
For 2 persons:
- 20 salted anchovies
- 1 boiled egg
- 1 piece of stale bread (use the day before bread)
- 2 tablespoon of italian parsley
- a glass of olive oil
- half glass of white wine vinegar
- salt and pepper
For the red sauce:
- dried tomatoes
- 1 small onion
- 1 spoon of red wine vinegar
- a glass of olive oil
- 1 spoon of sugar (yes I wrote sugar...)
- salt and pepper
This recipe is a typical appetizer in Piedomnt, there are several variation of it, the red sauce is one of them, and, IMO it is perfect for those who dont' like parsley or cant eat it.
Ok now, first of all just put some music on, okay that's not a rule but we are going to be creative and turn a boring november rainy day in something funny aren't we? So, as I said, put some music on, than clean the anchovies, put them under the water, cold water and remove the bones and put them apart, I use to dry them leaving them on a kitchen paper while I prepare the sauce.
Now,just choose the first sauce to prepare,I will for the green one.
Green Sauce:
Take the bread put the vinegar on it than squeeze it a bit, then chop all the ingredients togheter, adjust with salt and pepper and that's it..easy uh? Isn't it the prefect appetizer for the "last minute dinner"?
Red Sauce:
This is a little bit more complicated, first of all chop the onion and brown it in a pan, use one big enough since you will have to put in it all the ingredients.
While the onion is browning, chop the tomatoes and than add them, than put in the pan everything else and mix everything for 10 mins. Let cool the sauce than chop everything again with the mixer and it's done.

Now all you have to do is put in a plate the anchovies, the sauce building different layers of it, put in the fridge for at least 30 mins and eat.
